Anissa, who comes from Indonesia, is a rare gem to be found in a tropical country.
Her love story with cheese started when she was 5 – oh, that very first bite!
Seven years ago, she dedicated a room of her house to the art of cheese making. She then devoured books, contacted world masters in the field, received microflora from Savoy. Mozzarella, camembert, cheddar and feta were her first tests.
Heat and humidity usually are incompatible with such creations but not only is Anissa skilled, she is incredibly patient. And patience you need to make these cheeses with names from faraway places: Tomme de Savoie, Saint Paulin, Gruyère… Each registered designation of origin is rigorously respected: the perfect opportunity to add a little colour to your cheese platter! The Fourme d’Ambert has been renamed Amber Blu, the Bleu d’Auvergne Saphir Blu.
The process is slow, this kind of passion requiring precision at every step, but this craft cheesemonger’s production simply is exceptional!
