GOOD FRANCE – ST REGIS: A CHEF’S TRIBUTE TO HIS MASTERS

Here, you need to read between the lines: this ephemeral menu, composed by Chef Alain Rion, who learnt from the best, is in fact an ode. The Truffled Chicken Consommé found inspiration in Paul Bocuse’s famous VGE Soup. The Sweetbread Macaroni in Alain Ducasse’s repertoire. The Foie Gras “Pot au Feu“ was his grandmother’s creation. A Chef herself, she helped him realised what his destiny was… Last but not least, The Rose des Sables salutes Bernard Loiseau’s skills. Tonight, you are dining with stars… Only perfection and refinement will do.
Vegetables, freshly made foie gras, fish: every single ingredient will have been imported from France for the occasion, a symbol of excellence for this Chef.
Dishes will be placed in front of you, one after the other, each symbolising a season. The zander and its puree of shallots will evoke autumnal flavours, the pot au feu winter ones, the rose des sables and its chocolate sorbet spring. Summer will be summoned through vineyards harvests, each dish being paired to the perfect wine*. Bourgogne aligoté or Beaujolais Village add exquisite finishing touches to a simply flawless meal.
