THE BEST MUSSELS AND FRIES OF THE CAPITAL

Take a clove of garlic, some celery, add a touch of butter, a spoonful of mustard and top with a bouquet garni. Let this brown gently, pour the mussels in. Choose well: their origin, their quality, the right quantity will make the success of this recipe – a little expertise too!
Philippe comes from one of the oldest towns in Belgian, Huy. The dish, invented 142 years ago, is a favourite in the Kingdom, from the South to the North – how could he not bring the recipe with him? Come and see him: there are 6 variations to try, served with fries, as tradition dictates. Delightful, authentic Belgian flavours. To beer lovers, the chef recommends one of the world best, a Duvel: “a golden brew owing its perfection to hops selected since 1865 and a secondary fermentation in bottle“.
